The basis of the CO2 method is that green coffee beans are soaked in liquid CO2. Under the right conditions (predominantly very high pressure) the caffeine is drawn out of the bean and filtered, leaving the coffee flavour compounds unaltered. The caffeine rich liquid CO2 is diverted to a separate vessel. The liquid CO2 is then returned to a gas by reducing the pressure. Under atmospheric pressure caffeine stays in liquid format and is easily separated. It is used for caffeine rich products (such as energy bars and drinks). The gaseous caffeine free CO2 is then re-pressurised to a liquid and the decaf process starts again. This process gives the best results, and maintains the organic status of the product.
